Certificate in Food Science and Processing Technology

The Certificate in Food Science and Processing Technology is a competency-based qualification examined by the TVET Curriculum Development, Assessment and Certification Council (CDACC) at Level 5 that equips learners with practical skills in food processing, preservation, quality control, and food safety. The programme is designed for individuals seeking entry-level positions in Kenya's food manufacturing industry.

Students develop competencies in food processing techniques, food preservation methods, food microbiology and safety, food quality control and testing, food packaging technology, and sensory evaluation. The curriculum also covers food engineering principles, nutrition and food composition, environmental impact of food processing, and food laws and regulations, ensuring graduates have both technical and regulatory knowledge required in the food industry.

Kenya's food processing sector is a significant component of the manufacturing industry, with companies producing dairy products, baked goods, beverages, canned foods, and processed meats. The demand for trained food processing technicians persists as the sector grows with increasing consumer demand for packaged and processed foods.

The programme is delivered through full-time study at technical training institutes, national polytechnics, and specialised training institutions across Kenya. Teaching combines classroom instruction with extensive practical sessions in food processing laboratories, covering thermal processing, canning, drying, fermentation, and packaging. Industrial attachment in food processing companies is included.

Graduates can work as food processing technicians, quality control assistants, laboratory assistants, and food production assistants in food manufacturing companies, quality assurance laboratories, and regulatory bodies. Many proceed to pursue the Diploma in Food Technology.

This programme is suitable for KCSE graduates with a mean grade of D (plain) who are interested in food science and manufacturing and seeking technical positions in Kenya's food processing and preservation industry.

A day as a student

A typical day begins with a morning lecture on food processing principles or food microbiology, followed by practical sessions in the food processing laboratory where students practise thermal processing, canning, drying, fermentation, and packaging techniques. Afternoon sessions cover food quality control, sensory evaluation, or laboratory testing, with students conducting food analysis experiments and quality tests. Industrial visits to food processing plants are regularly organised to observe commercial food production.

The trade offs

In its favour

  • Kenya's food processing sector is growing with increasing demand for packaged and processed foods.
  • CDACC competency-based qualification aligned with industry needs and recognised under KNQF.
  • Provides a direct pathway to Diploma in Food Technology.
  • Practical curriculum with extensive laboratory and food processing facility training.

Against it

  • Food processing work may involve shift work in factory environments.
  • Career progression to senior technical and management roles requires diploma or degree qualifications.
